Sodium triphosphate Also known as Sodium tripolyphosphate (STPP), is the sodium salt of triphosphoric acid. STPP is a colorless salt that exists both in anhydrous form Na5P3O10 and in hexahydrate form H12Na5O16P3.
Sodium phosphates have many applications in food . For example, sodium phosphates are often used as emulsifiers (as in processed cheese), thickening agents, and leavening agents for baked goods. They are also used to control pH of processed foods. STPP helps retain moisture, improves texture, and prevents meat and fish from becoming greasy. It’s also used to preserve the natural color of meat and fish.

In certain industrial applications, Sodium Tripolyphosphate (STPP) may be used as an antifreeze agent to lower the freezing point of water-based solutions.it is a component of many detergents, helping them penetrate fibers and foam and STPP’s pH buffering ability makes it useful as a water softener.
